Description
Soft homemade skillet flatbread flavored with fresh garlic, rosemary, and thyme. Perfect for wraps, dipping, and serving alongside soups, salads, and appetizers.
Ingredients
1 packet active dry yeast (2 1/4 teaspoons)
2 garlic cloves, minced (about 1 tablespoon)
1 tablespoon minced fresh rosemary and thyme
3/4 teaspoon sea salt
1/2 teaspoon granulated sugar
1 1/4 cups all-purpose flour
3/4 cup spelt flour (or additional all-purpose flour)
1 tablespoon olive oil, plus extra for greasing
3/4 cup warm water (about 110°F)
Instructions
1. In a large mixing bowl, whisk together the yeast, minced garlic, herbs, salt, sugar, all-purpose flour, and spelt flour.
2. Create a well in the center of the dry ingredients. Add the olive oil and about 1/2 cup of the warm water. Stir with a wooden spoon until a dough begins to form.
3. Gradually add the remaining water as needed until the dough comes together.
4. Transfer the dough to a lightly floured surface and knead for about 2 minutes, or until smooth and elastic. Add a little extra flour if the dough becomes sticky.
5. Lightly oil a clean mixing bowl and place the dough inside, turning it to coat all sides. Cover with a damp towel or plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
6. Punch down the dough and divide it into 6 equal portions. Arrange the pieces on a clean surface and cover with a damp towel while resting.
7. Heat a large skillet or cast-iron pan over medium-high heat.
8. On a lightly floured surface, roll one dough portion into a thin round, about 1/8 inch thick.
9. Lightly grease the hot skillet and place the flatbread in the pan. Cook for about 2 1/2 minutes without moving it.
10. Flip and cook for another 2 1/2 minutes until lightly browned and cooked through.
11. Repeat with the remaining dough, lightly greasing the skillet as needed.
12. Serve warm for wraps, dipping, or alongside your favorite meals.
Notes
For a softer texture, keep cooked flatbreads covered with a clean kitchen towel until serving.
Additional all-purpose flour may be substituted for the spelt flour.
