Taco Potato Casserole: A Flavor-Packed Comfort Classic

Ingredients

  • 30 ounces frozen shredded hash brown potatoes

  • 1 1/2 pounds lean ground beef

  • Two 10-ounce cans diced tomatoes with green chiles

  • Two 1-ounce packets taco seasoning

  • 4 scallions, thinly sliced, whites and greens separated

  • 8 ounces processed cheese, cut into small cubes

  • 8 ounces shredded Cheddar cheese (about 2 cups)

  • Sour cream, guacamole, pickled jalapeños, and fresh cilantro for serving


Instructions

  • Preheat the oven to 400°F.

  • Spread the hash browns evenly in a  baking dish.

  • Break the ground beef into small pieces and scatter it over the potatoes.

  • Spoon the diced tomatoes with green chiles over the beef, then sprinkle the taco seasoning and scallion whites on top.

  • Distribute the processed cheese cubes evenly across the dish.

  • Bake for about 45 minutes, or until the beef is fully cooked.

  • Remove the dish from the oven and stir everything together until well mixed.

  • Sprinkle the shredded Cheddar over the top and return the dish to the oven. Bake for about 15 minutes, or until the cheese has melted and is lightly bubbling.

 

  • Let the casserole cool for 10 minutes. Add scallion greens, and serve with sour cream, guacamole, pickled jalapeños, and cilantro.
