30 ounces frozen shredded hash brown potatoes

1 1/2 pounds lean ground beef

Two 10-ounce cans diced tomatoes with green chiles

Two 1-ounce packets taco seasoning

4 scallions, thinly sliced, whites and greens separated

8 ounces processed cheese, cut into small cubes

8 ounces shredded Cheddar cheese (about 2 cups)

Sour cream, guacamole, pickled jalapeños, and fresh cilantro for serving
Instructions

Preheat the oven to 400°F.

Spread the hash browns evenly in a baking dish.

Break the ground beef into small pieces and scatter it over the potatoes.

Spoon the diced tomatoes with green chiles over the beef, then sprinkle the taco seasoning and scallion whites on top.

Distribute the processed cheese cubes evenly across the dish.

Bake for about 45 minutes, or until the beef is fully cooked.

Remove the dish from the oven and stir everything together until well mixed.

Sprinkle the shredded Cheddar over the top and return the dish to the oven. Bake for about 15 minutes, or until the cheese has melted and is lightly bubbling.

Let the casserole cool for 10 minutes. Add scallion greens, and serve with sour cream, guacamole, pickled jalapeños, and cilantro.
