Description
Creamy Tex-Mex spinach queso loaded with melted cheese, fresh spinach, and topped with crispy jalapeños. Perfect for dipping tortilla chips and serving at parties or gatherings.
Ingredients
2 jalapeños, seeds and ribs removed, finely minced
1/2 medium onion, finely minced
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
3 handfuls fresh baby spinach
2 to 3 tablespoons all-purpose flour
1 1/2 cups milk
8 ounces shredded melting cheese (such as cheddar or Monterey Jack)
Crispy fried jalapeño pieces
2 tablespoons chopped fresh cilantro
Tortilla chips, for serving
Instructions
1. Heat butter and olive oil in a large skillet over medium heat. Add minced jalapeños and onion. Cook 5–8 minutes until soft and fragrant.
2. Stir in garlic and fresh spinach. Cook 1–2 minutes until spinach wilts.
3. Sprinkle flour over the mixture and stir to coat evenly. Cook 1 minute.
4. Slowly pour in milk while whisking continuously until smooth and slightly thickened.
5. Remove skillet from heat and stir in shredded cheese until melted and creamy.
6. Transfer to a serving bowl. Top with crispy jalapeño pieces and chopped cilantro. Serve warm with tortilla chips.
Notes
Freshly shredded cheese melts more smoothly than pre-packaged cheese.
If the queso becomes too thick, stir in a splash of warm milk.
Serve immediately for the best creamy texture.
