Description

A rich, creamy southern baked mac and cheese with layers of bold flavor and a golden baked finish.


Ingredients

1 pound elbow macaroni

8 ounces sharp cheddar cheese, shredded

8 ounces smoked gouda cheese, shredded

8 ounces pepper jack cheese, shredded

8 ounces processed melting cheese, cubed

1/2 cup unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

2 cups half-and-half

1 teaspoon kosher salt

1 teaspoon black pepper

1 teaspoon ground mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon nutmeg

Pinch cayenne pepper


Instructions

1. Preheat oven to 375°F and grease baking dish.

2. Cook macaroni until al dente, drain and set aside.

3. Melt butter and whisk in flour until golden.

4. Add milk and half-and-half, whisk until smooth.

5. Simmer until thickened, then add seasoning.

6. Stir in cheeses until melted.

7. Combine pasta with sauce.

8. Layer with cubed cheese and remaining pasta.

9. Top with reserved cheese.

10. Bake 35 minutes until bubbly.

11. Broil briefly for golden top.

12. Rest and serve.

Notes

Do not overcook pasta.

Let dish rest before serving.

Add milk when reheating for creaminess.
