Description
Tender beef steaks slow cooked with rich onions, savory broth, mushrooms, and melted Swiss cheese served over creamy mashed potatoes.
Ingredients
4 medium onions, peeled and sliced into rings
1 cup sliced mushrooms
4 beef chuck steaks or blade steaks
¼ teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme
1 tablespoon brown sugar
2 tablespoons butter
1 cup beef broth
2 tablespoons Worcestershire sauce
4 slices Swiss cheese, folded in half
Optional Slurry:
2 tablespoons water
1 tablespoon cornstarch
For Serving:
Mashed potatoes
Fresh parsley, chopped
Freshly cracked black pepper
Instructions
1. Peel the onions and slice them into rings. Separate the rings with your fingers and spread them evenly across the bottom of the slow cooker.
2. Slice the mushrooms and set them aside for later.
3. Season both sides of the beef steaks with salt and black pepper.
4. Add the brown sugar, butter, garlic powder, and dried thyme over the onions. Pour in the beef broth and Worcestershire sauce.
5. Place the seasoned steaks on top of the onion mixture. Cover with the lid and cook on high for 3 hours or low for 6 hours.
6. If using the slurry, whisk together the cornstarch and water in a small bowl until smooth.
7. After the initial cooking time, remove the steaks and place them on a plate or cutting board. Stir the slurry into the slow cooker liquid to help thicken the sauce.
8. Return the steaks to the slow cooker. Place one folded slice of Swiss cheese over each steak, then scatter the mushrooms on top.
9. Cover again and cook for an additional 15–30 minutes on high or 30–45 minutes on low, until the mushrooms are tender and the cheese is melted.
10. Garnish with chopped parsley and freshly cracked black pepper before serving.
11. Serve the beef and onion mixture over mashed potatoes with plenty of sauce spooned on top.
Notes
For extra rich flavor, cook on low for the full cooking time.
Mashed potatoes work best for soaking up the onion sauce.
You can substitute provolone or Gruyère cheese if desired.
