Description
A comforting one-skillet chicken and rice dinner made with tender chicken breast, fluffy rice, herbs, peas, and savory broth.
Ingredients
1 pound boneless, skinless chicken breast, sliced into 1/2-inch thick strips
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 1/2 cups long-grain white rice, rinsed
3 to 4 cups chicken broth
1 cup frozen sweet peas
2 tablespoons fresh parsley, chopped for garnish
Instructions
1. Season the chicken strips with salt and black pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 3 minutes on each side until lightly golden. Remove from the skillet and set aside.
3. Add the diced onion and minced garlic to the skillet. Cook for 2 to 3 minutes until softened and fragrant.
4. Stir in the dried oregano and basil. Add the rinsed rice and mix well so the grains are coated with the seasonings.
5. Return the chicken to the skillet. Pour in 3 cups of chicken broth and gently stir. Bring the mixture to a simmer.
6. Reduce the heat to low, cover the skillet, and cook for 15 minutes.
7. Check the rice. If needed, add another 1/2 cup of broth and continue cooking until tender.
8. Stir in the frozen peas during the last few minutes of cooking until heated through.
9. Sprinkle with fresh parsley before serving.
Notes
Rinse the rice before cooking for the best fluffy texture.
Add extra broth gradually if the rice needs more cooking time.
Store leftovers in an airtight container for up to 3 days.
