Description

Creamy Mediterranean hummus made with roasted garlic, chickpeas, tahini, lemon juice, and flavorful toppings.


Ingredients

2 heads garlic

2 tablespoons olive oil, plus more for serving

2 (15-ounce) cans chickpeas, drained (or 2 1/2 cups cooked chickpeas)

1/4 cup tahini

3 tablespoons fresh lemon juice

2 tablespoons water, plus more as needed

1 teaspoon salt, or to taste

1 teaspoon sumac

1/2 teaspoon cayenne pepper (optional)

1 teaspoon za’atar seasoning

3 tablespoons fresh parsley, chopped

2 tablespoons toasted pine nuts

2 tablespoons crumbled feta cheese


Instructions

1. Preheat the oven to 400°F. Line a small baking sheet with foil.

2. Remove any loose outer layers from the garlic heads, keeping the cloves intact. Slice about 1/2 inch off the tops to expose the cloves.

3. Place each garlic head on a piece of foil. Drizzle the exposed cloves with olive oil and wrap tightly.

4. Roast for 40 to 45 minutes, or until the garlic is soft and golden. Allow it to cool slightly.

5. Squeeze the roasted garlic cloves from their skins into a food processor.

6. Add the chickpeas, tahini, lemon juice, water, salt, sumac, and cayenne pepper if using.

7. Blend until very smooth. Add additional water, 1 tablespoon at a time, until the hummus reaches your preferred consistency.

8. Taste and adjust the seasoning with more salt, lemon juice, or spices as desired.

9. Transfer the hummus to a serving bowl and spread it into an even layer.

10. Drizzle with olive oil and sprinkle with za’atar.

11. Garnish with parsley, toasted pine nuts, and feta cheese. Serve with fresh vegetables, pita wedges, or crackers.

Notes

For extra smooth hummus, blend longer and add water gradually until the desired texture is reached.

Store in an airtight container in the refrigerator for up to 5 days.
