Ingredients
2 medium zucchini (about 1 pound), sliced into 1/4-inch rounds
1 1/2 tablespoons olive oil
1/3 cup grated Parmesan cheese
1/3 cup panko breadcrumbs
1/4 cup fresh basil, finely chopped
1/4 teaspoon garlic powder
1/8 teaspoon fine sea salt
1/8 teaspoon black pepper
Instructions
1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
2. Slice the zucchini into 1/4-inch thick rounds.
3. Place the zucchini in a large bowl and toss with the olive oil until evenly coated.
4. In a shallow dish, combine the Parmesan cheese, breadcrumbs, basil, garlic powder, salt, and pepper.
5. Press each zucchini slice into the breadcrumb mixture, coating both sides lightly.
6. Arrange the coated zucchini slices in a single layer on the prepared baking sheet.
7. Bake for 25 to 30 minutes, or until the coating is golden brown and crispy.
8. Remove from the oven and serve warm as a snack, appetizer, or side dish.
Notes
For maximum crispiness, avoid overcrowding the baking sheet. Serve immediately after baking for the best texture.
