Description

Golden roasted baby potatoes coated in garlic, herbs, and Parmesan cheese, creating a crispy crust and tender center that makes an irresistible appetizer or side dish.


Ingredients

2 tablespoons olive oil

3 garlic cloves, finely grated

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/8 teaspoon cayenne pepper (optional)

1 tablespoon finely chopped fresh parsley, plus extra for garnish (optional)

1 1/2 pounds yellow baby potatoes, cleaned and patted dry

3/4 cup grated Parmesan cheese


Instructions

1. Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.

2. In a large bowl, combine the olive oil, grated garlic, salt, black pepper, cayenne pepper (if using), and parsley.

3. Cut each potato in half and add it to the bowl as you work. Toss well to coat all the potatoes in the seasoned oil mixture.

4. Add the grated Parmesan cheese and gently toss until the potatoes are lightly coated.

5. Arrange the potatoes in a single layer on the prepared baking sheet with the cut sides facing down. Spoon any remaining Parmesan mixture onto the flat sides of the potatoes.

6. Roast for 25 to 35 minutes, rotating the pan halfway through cooking, until the potatoes are fork-tender and the Parmesan is deep golden brown and crispy.

7. Remove the baking sheet from the oven and let the potatoes rest for 5 minutes to allow the cheese crust to set.

8. Carefully flip the potatoes over using a thin spatula if needed. Transfer to a serving platter, garnish with additional parsley if desired, and serve immediately.

Notes

Dry the potatoes thoroughly before coating to encourage maximum crispiness. Freshly grated Parmesan produces the best golden crust.
