Description
Crispy buffalo chicken bites tucked into mini flour tortillas with fresh slaw and creamy blue cheese dressing for an easy appetizer or game day snack.
Ingredients
4 large flour tortillas
1 (20-ounce) package frozen boneless buffalo chicken bites
1 cup thinly sliced celery
1 cup shredded carrots
2 cups coleslaw mix or thinly sliced green cabbage
Toothpicks, for serving
1/4 cup mayonnaise
1/3 cup sour cream
1 1/2 tablespoons lemon juice
1/3 cup crumbled blue cheese
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat the oven according to the directions on the package of buffalo chicken bites. Line a baking sheet with aluminum foil.
2. Whisk together the mayonnaise, sour cream, lemon juice, blue cheese, salt, and pepper until smooth.
3. Arrange the chicken bites on the prepared baking sheet and bake according to package directions.
4. Combine celery, carrots, and coleslaw mix in a large bowl.
5. Cut small rounds from the flour tortillas.
6. Toss cooked chicken with the buffalo sauce included in the package.
7. Place slaw on each tortilla round and add 2 to 3 chicken bites.
8. Top with more slaw and drizzle with blue cheese dressing.
9. Fold slightly and secure with a toothpick if desired.
10. Serve immediately.
Notes
For extra crunch, chill the slaw before assembling.
Assemble shortly before serving to keep tortillas fresh.
