Ingredients
15 phyllo pastry shells
1/4 cup crumbled feta cheese
1/4 cup tomato, finely diced
1/4 cup cucumber, finely chopped
1 green onion, finely diced
1 tablespoon olive oil
1 teaspoon lemon juice
1/8 teaspoon dried basil
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon dried dill
Instructions
1. Finely dice the tomato, cucumber, and green onion. If preferred, peel the cucumber before chopping.
2. In a small mixing bowl, combine the feta cheese, tomato, cucumber, and green onion.
3. In a separate small bowl, whisk together the olive oil, lemon juice, dried basil, garlic powder, salt, black pepper, and dill.
4. Pour the dressing over the vegetable mixture and gently toss until everything is evenly coated.
5. Spoon the mixture into the phyllo shells, dividing it evenly among all 15 cups.
6. Serve immediately for the best texture and flavor.
Notes
For the crispiest texture, fill the phyllo shells just before serving. The filling can be prepared ahead and refrigerated for several hours.
