Description

Creamy homemade hummus topped with fresh cucumbers, tomatoes, olives, feta cheese, and herbs for a colorful Mediterranean appetizer.


Ingredients

2 (15-ounce) cans chickpeas, drained and rinsed

1/4 cup reserved chickpea liquid

1/4 cup tahini

1 tablespoon plus 2 teaspoons fresh lemon juice

3/4 teaspoon sea salt, plus more to taste

3 garlic cloves

1/3 cup olive oil

For the Topping:

2 Persian cucumbers, finely diced

1/3 cup cherry tomatoes, diced or quartered

1/4 cup thinly sliced red onion

8 pitted Kalamata olives, halved

1 tablespoon olive oil

Small squeeze of fresh lemon juice

Salt, to taste

2 tablespoons crumbled feta cheese

1 tablespoon chopped fresh dill, mint, or both

For Serving:

Warm pita wedges

Baked pita chips

Crackers

Lavash bread


Instructions

1. Add the chickpeas, reserved chickpea liquid, tahini, lemon juice, sea salt, and garlic cloves to a food processor.

2. Process for 2 to 3 minutes, scraping down the sides as needed.

3. With the processor running, slowly drizzle in the olive oil.

4. Continue processing for 4 to 5 minutes until smooth and creamy.

5. Transfer the hummus to a serving bowl.

6. Combine cucumber, tomatoes, red onion, and olives in a bowl.

7. Drizzle with olive oil and lemon juice, then season with salt.

8. Spoon the vegetable mixture over the hummus.

9. Sprinkle with feta cheese and fresh herbs.

10. Serve immediately with pita wedges, pita chips, crackers, or lavash bread.

Notes

For the smoothest texture, process the hummus several minutes longer than you think necessary. Add toppings just before serving for maximum freshness.
