Ingredients

4 salmon fillets (4–6 ounces each)

1 tablespoon minced garlic

1 tablespoon lemon zest

2 tablespoons lemon juice

2 tablespoons olive oil

¾ teaspoon salt

1 teaspoon freshly ground black pepper

½ teaspoon red pepper flakes

1 lemon, thinly sliced
Instructions

Preheat your oven to 400°F.

In a small bowl, whisk together the garlic, lemon zest, lemon juice, olive oil, salt, black pepper, and red pepper flakes.

Place the salmon fillets on a baking sheet. Spoon the mixture evenly over the top, allowing any extra to collect around the fillets.

Lay a few thin lemon slices on each fillet.

Bake for 12–18 minutes, depending on the thickness of the fillets and how well done you prefer your salmon. The salmon should flake easily and appear evenly cooked throughout.

Serve with your choice of rice, quinoa, cauliflower rice, or steamed vegetables. Add an extra squeeze of lemon if desired.
