Ingredients

  • 4 salmon fillets (4–6 ounces each)

  • 1 tablespoon minced garlic

  • 1 tablespoon lemon zest

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • ¾ teaspoon salt

  • 1 teaspoon freshly ground black pepper

  • ½ teaspoon red pepper flakes

  • 1 lemon, thinly sliced


Instructions

  • Preheat your oven to 400°F.

  • In a small bowl, whisk together the garlic, lemon zest, lemon juice, olive oil, salt, black pepper, and red pepper flakes.

  • Place the salmon fillets on a baking sheet. Spoon the mixture evenly over the top, allowing any extra to collect around the fillets.

  • Lay a few thin lemon slices on each fillet.

  • Bake for 12–18 minutes, depending on the thickness of the fillets and how well done you prefer your salmon. The salmon should flake easily and appear evenly cooked throughout.

  • Serve with your choice of rice, quinoa, cauliflower rice, or steamed vegetables. Add an extra squeeze of lemon if desired.
