Description

Crispy golden corn fritters packed with sweet corn, cheddar cheese, green onions, and jalapeños, served with a creamy spicy ranch dip.


Ingredients

For the spicy ranch dip:

1 cup mayonnaise

1/4 cup whole milk

2 tablespoons dry ranch seasoning

1 tablespoon sriracha sauce

For the corn fritters:

2 cans corn kernels, 15.25 ounces each, drained

1 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon kosher salt

1/4 teaspoon black pepper

1 tablespoon minced garlic

2 large eggs, room temperature

1/2 cup whole milk, room temperature

1/3 cup chopped green onions

2 medium jalapeños, seeded and diced

1/4 cup finely shredded mild cheddar cheese

Vegetable oil, for frying


Instructions

1. Make the dip by whisking together the mayonnaise, milk, ranch seasoning, and sriracha in a medium bowl until smooth. Cover and refrigerate until serving.

2. In a large bowl, combine the corn, flour, baking powder, salt, pepper, garlic, eggs, milk, green onions, jalapeños, and cheddar cheese. Stir until everything is evenly mixed.

3. Pour about 1/2 inch of vegetable oil into a large skillet and warm it over medium heat.

4. Scoop about 3 tablespoons of batter into the skillet for each fritter. Cook in batches so the pan is not crowded, gently flattening each fritter to about 3 inches wide.

5. Fry for 3 to 4 minutes per side, or until crisp and golden brown.

6. Transfer the cooked fritters to a paper towel-lined plate to drain.

7. Serve warm with the spicy ranch dip.

Notes

Drain the corn thoroughly before mixing the batter.

Avoid overcrowding the skillet to ensure crisp edges.
