Description
Grandma’s Smothered Chicken is a comforting skillet dinner made with tender chicken simmered in creamy homemade onion gravy.
Ingredients
8 boneless chicken thighs or drumsticks
1 cup plus 3 tablespoons all-purpose flour
2 tablespoons garlic powder
2 tablespoons salt
1 tablespoon black pepper
1 yellow onion, chopped
2 garlic cloves, minced
1 1/2 cups chicken broth
1/3 cup milk
2 to 3 tablespoons olive oil
Instructions
1. Preheat the oven to 400°F.
2. Heat the olive oil in a large oven-safe skillet over medium-high heat.
3. In a shallow bowl, mix 1 cup flour with the garlic powder, salt, and black pepper.
4. Coat the chicken in the seasoned flour, shaking off any extra.
5. Place the chicken in the hot skillet and sear for 5 to 7 minutes per side, until lightly golden. The chicken does not need to be fully cooked yet.
6. Remove the chicken from the skillet and set it aside.
7. Reduce the heat to medium. Add the onion and garlic to the same skillet and cook until softened.
8. Sprinkle in the remaining 3 tablespoons flour and stir until it absorbs the oil and pan juices.
9. Slowly pour in the chicken broth while stirring constantly. Let the mixture gently bubble until it begins to thicken.
10. Stir in the milk until the gravy is smooth and creamy.
11. Return the chicken to the skillet and spoon some gravy over the top.
12. Transfer the skillet to the oven and bake for 30 to 40 minutes, or until the chicken reaches 165°F.
13. Serve warm with rice or mashed potatoes.
Notes
For extra flavor, allow the chicken to brown deeply before removing it from the skillet.
If the gravy thickens too much, stir in a splash of chicken broth while reheating.
