Description

Crispy homemade garlic herb crackers made with arrowroot flour, olive oil, rosemary, thyme, and garlic. A gluten-free, vegan, and AIP-friendly snack perfect for dipping or serving on appetizer boards.


Ingredients

1 cup arrowroot flour

1/4 teaspoon baking soda

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/4 teaspoon garlic powder

4 tablespoons olive oil

5 tablespoons water

Coarse sea salt, for topping


Instructions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the arrowroot flour, baking soda, thyme, rosemary, and garlic powder.

3. Add the olive oil and water. Stir until the dough begins to come together, then knead gently with your hands until a smooth dough forms.

4. Place the dough onto a sheet of parchment paper. Cover with another sheet of parchment and roll the dough out as thinly as possible using a rolling pin.

5. Transfer the rolled dough, still between the parchment sheets, onto the baking sheet. Remove the top layer of parchment paper.

6. Use a pizza cutter or sharp knife to score the dough into 2-inch squares without separating them. Sprinkle lightly with coarse sea salt.

7. Bake for about 20 minutes, or until the crackers are lightly golden and crisp around the edges.

8. Let the crackers cool on the baking sheet for at least 15 minutes before breaking them apart along the scored lines.

9. Serve right away or store in an airtight container for up to 4 days.
