Ingredients

1/2 medium onion, finely diced

1 pound lean ground beef

2 teaspoons garlic powder

3 tablespoons all-purpose flour

1 tablespoon paprika

1/4 cup beef broth (for deglazing)

3 cups low-sodium beef broth

1 cup milk

1 1/2 teaspoons salt

1/2 teaspoon ground black pepper

2 cups dry rotini pasta

2 cups shredded sharp cheddar cheese


Instructions

1. Heat a large skillet over medium heat. Add the ground beef, diced onion, and garlic powder. Cook, breaking up the meat, until the beef is fully browned and the onion is softened. Drain excess fat if needed and return the skillet to the heat.

2. Sprinkle the flour and paprika over the beef mixture. Stir well and cook for 1 to 2 minutes, until the mixture thickens slightly and coats the meat.

3. Pour in the 1/4 cup beef broth, stirring and scraping the bottom of the pan to loosen any flavorful bits. Cook until the liquid is mostly absorbed.

4. Gradually stir in the remaining beef broth, milk, salt, and black pepper. Bring the mixture to a gentle boil.

5. Add the dry pasta, reduce the heat to a simmer, and cover the skillet with the lid slightly ajar. Cook, stirring occasionally, until the pasta is tender and the sauce has thickened, about 18 minutes.

6. Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Serve hot.

Notes

For a richer flavor, use sharp cheddar or mix in some cream cheese. This dish can be stored in the fridge for up to 4 days or frozen for 2 months. Reheat with a splash of milk to keep it creamy.
