Description
A fast and flavorful stir-fry made with tender sliced beef, crisp broccoli florets, and a balanced savory sauce. Perfect for weeknight dinners and ready in just 20 minutes.
Ingredients
3 tablespoons cornstarch, divided
1 pound flank steak, thinly sliced
1/2 cup low-sodium soy sauce
3 tablespoons light brown sugar
1 tablespoon minced garlic
2 teaspoons grated fresh ginger
2 tablespoons vegetable oil, divided
4 cups small broccoli florets
1/2 cup sliced white onion
Instructions
1. In a large bowl, whisk together 2 tablespoons cornstarch with 3 tablespoons water until smooth. Add the sliced steak and toss to coat.
2. In a separate bowl, whisk the remaining 1 tablespoon cornstarch with the soy sauce, brown sugar, garlic, and ginger. Set aside.
3. Warm a large nonstick skillet over medium heat. Add 1 tablespoon vegetable oil. When hot, add the beef and cook, stirring often, until mostly cooked through. Transfer the beef to a plate.
4. Add the remaining 1 tablespoon vegetable oil to the same skillet. Stir in the broccoli and onion and cook until the broccoli is crisp-tender, about 4 minutes.
5. Return the beef to the pan and pour in the prepared sauce. Bring the mixture to a full boil and cook for 1 minute, or until the sauce thickens slightly.
6. Serve warm with rice or noodles.
Notes
Slice the beef thinly for tender results. Fresh broccoli works best for a crisp texture, but frozen broccoli can be used if cooked quickly.
