Description
Tender chicken simmered in a rich Parmesan cream sauce with garlic and tangy sun-dried tomatoes. This quick skillet dinner comes together in just 20 minutes and pairs perfectly with pasta, mashed potatoes, or crusty bread.
Ingredients
1 1/2 pounds boneless, skinless chicken thighs or chicken breasts
1/2 teaspoon salt
Black pepper, to taste
1/2 cup oil-packed sun-dried tomatoes, drained and sliced
2 tablespoons oil from the sun-dried tomato jar
2 garlic cloves, minced
1 1/4 cups low-sodium chicken broth
3/4 cup heavy cream
1/3 cup finely grated Parmesan cheese
2 teaspoons Dijon mustard
1 cup fresh basil leaves, optional
Instructions
1. If using chicken breasts, slice them horizontally into thinner cutlets so they cook evenly.
2. Season the chicken with salt and black pepper.
3. Heat the sun-dried tomato oil in a large skillet over high heat.
4. Add the chicken and cook until golden and cooked through, about 6 minutes total for thighs or 4 minutes total for thin chicken breast pieces. Transfer to a plate.
5. Reduce the heat slightly, add the garlic, and cook for about 15 seconds until fragrant.
6. Stir in the Dijon mustard, then pour in the chicken broth. Scrape the bottom of the skillet to loosen the browned bits.
7. Add the heavy cream, Parmesan, and sun-dried tomatoes. Bring to a gentle simmer.
8. Cook for 2 to 3 minutes, stirring often, until the sauce thickens and the cheese melts smoothly.
9. Taste and adjust with more salt or pepper as needed.
10. Stir in the basil, if using. Return the chicken to the skillet and spoon the sauce over the top.
11. Simmer for 1 minute, then serve warm with pasta, mashed potatoes, cauliflower mash, or bread.
Notes
Chicken thighs stay especially juicy in this recipe, but chicken breasts also work well when sliced thinly.
Freshly grated Parmesan melts more smoothly into the sauce than pre-shredded cheese.
For a lighter version, substitute part of the heavy cream with half-and-half.
