Description
A rich and comforting Southern dish made with creamy cheesy grits, tender shrimp, and a flavorful sausage gravy.
Ingredients
3 1/2 cups water
1 cup chicken broth
Salt, to taste
1 cup stone-ground grits
2 tablespoons butter
1/3 cup half-and-half
1/2 to 1 cup shredded sharp cheddar cheese
1/4 teaspoon white pepper
1 pound shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1/4 teaspoon white pepper
4 tablespoons butter
6 ounces smoked turkey sausage or smoked chicken sausage
1/2 green bell pepper, diced
1/2 small yellow onion, diced
1 celery stalk, diced
6 garlic cloves, minced
2 tablespoons all-purpose flour
1 1/4 cups chicken broth
1/4 cup heavy cream
1 tablespoon parsley
Instructions
1. Bring water, broth, and salt to a boil.
2. Whisk in grits slowly and cook 30 minutes, stirring.
3. Stir in butter, half-and-half, cheese, and pepper.
4. Season shrimp and rest 30 minutes.
5. Cook shrimp in butter 1–2 minutes per side.
6. Cook sausage until browned and set aside.
7. Cook vegetables until soft, then add garlic.
8. Stir in flour, then broth, then cream.
9. Return shrimp and sausage and simmer briefly.
10. Serve over warm grits and garnish with parsley.
Notes
Stir grits frequently to prevent lumps.
Do not overcook shrimp.
Add liquid to loosen grits if needed.
