Description
This creamy sausage and gnocchi soup combines tender potato gnocchi, Italian-style turkey sausage, spinach, Parmesan cheese, and a rich savory broth for the perfect cozy dinner.
Ingredients
1 tablespoon olive oil
1 pound Italian-style turkey sausage, removed from casings
1 medium onion, finely diced
1 medium carrot, diced
2 celery stalks, diced
2 large garlic cloves, minced
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1 tablespoon fresh lemon juice
4 cups chicken broth
3/4 cup heavy cream
1 pound potato gnocchi
1 handful baby spinach
1/4 cup freshly grated Parmesan cheese
Salt and black pepper to taste
Instructions
1. Heat the olive oil in a large heavy-bottomed pot over medium-high heat. Add the turkey sausage and cook for 4–5 minutes, breaking it into small pieces as it browns.
2. Stir in the onion, carrot, and celery. Cook for 2–3 minutes until the vegetables begin to soften.
3. Add the garlic, Italian seasoning, and red pepper flakes. Stir well and cook for 1 minute until fragrant.
4. Pour in the lemon juice and stir, scraping up any browned bits from the bottom of the pot.
5. Add the chicken broth and bring the soup to a gentle boil. Reduce the heat and simmer for about 10 minutes to develop the flavors.
6. Stir in the heavy cream, then add the gnocchi. Cook for 2–3 minutes, or until the gnocchi are tender and float to the top.
7. Add the baby spinach and Parmesan cheese. Stir until the spinach wilts and the cheese melts into the soup.
8. Taste and season with salt and black pepper as needed. Serve hot.
Notes
Freshly grated Parmesan melts more smoothly into the broth.
For extra richness, use spicy Italian sausage instead of turkey sausage.
Add sun-dried tomatoes for a deeper savory flavor variation.
