Description
This creamy roasted carrot soup combines caramelized carrots, warm spices, and a silky smooth texture for a comforting homemade meal.
Ingredients
2 pounds carrots, peeled and sliced diagonally into 1/2-inch pieces
3 tablespoons olive oil, divided
3/4 teaspoon fine sea salt, divided
1 medium yellow onion, chopped
2 garlic cloves, minced
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
4 cups vegetable broth
2 cups water
1 to 2 tablespoons unsalted butter
1 1/2 teaspoons lemon juice
Freshly ground black pepper, to taste
Instructions
1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper if desired.
2. Place the sliced carrots on the baking sheet. Drizzle with 2 tablespoons olive oil and sprinkle with 1/2 teaspoon salt. Toss until evenly coated, then spread into a single layer.
3. Roast the carrots for 25 to 40 minutes, stirring halfway through, until tender and caramelized around the edges.
4. While the carrots roast, heat the remaining 1 tablespoon olive oil in a large soup pot over medium heat. Add the chopped onion and remaining 1/4 teaspoon salt. Cook for 5 to 7 minutes, stirring occasionally, until softened.
5. Stir in the garlic, coriander, and cumin. Cook for about 1 minute, stirring constantly, until fragrant.
6. Pour in the vegetable broth and water, scraping up any flavorful bits from the bottom of the pot.
7. Add the roasted carrots to the pot and bring the mixture to a boil. Reduce the heat and simmer gently for 15 minutes.
8. Remove the soup from the heat and allow it to cool slightly. Carefully blend the soup in batches until smooth and creamy.
9. Return the blended soup to the pot if needed. Stir in the butter, lemon juice, and black pepper. Taste and adjust seasoning as desired.
10. Serve warm. Store leftovers in the refrigerator for up to 4 days or freeze for longer storage.
Notes
Roasting the carrots deeply enhances their sweetness and flavor.
Use an immersion blender for easier blending if preferred.
Adjust the lemon juice and black pepper to taste before serving.
