Description
Rich and creamy ranch chicken pasta made in one pot with cheddar cheese, ranch seasoning, tender chicken, and penne pasta.
Ingredients
2 cups cooked shredded boneless chicken
1 ounce dry ranch seasoning
8 ounces penne pasta, uncooked
3 1/2 cups chicken broth
4 ounces cream cheese, softened
2 cups shredded cheddar cheese
1 tablespoon chopped fresh parsley
Instructions
1. In a small bowl, toss the shredded chicken with the ranch seasoning until evenly coated.
2. Add the chicken broth, penne pasta, and seasoned chicken to a large pot over medium heat. Stir well and bring to a boil.
3. Reduce the heat to low, cover, and cook for 15 to 20 minutes, stirring occasionally, until the pasta is tender. A little liquid should remain in the pot.
4. Stir in the cream cheese until mostly melted and creamy.
5. Add the shredded cheddar cheese and stir until smooth and fully melted.
6. Sprinkle with fresh parsley and serve warm.
Notes
Freshly shredded cheddar melts more smoothly for the creamiest sauce.
Add a splash of broth when reheating leftovers to maintain the creamy texture.
