Description
Rich, creamy penne pasta tossed in a smooth pepper jack cheese sauce with garlic, Parmesan, and a touch of heat for an easy comforting dinner.
Ingredients
1 pound penne pasta
1/2 cup butter
1 1/2 cups heavy cream
1/3 cup pepperoncini juice, optional
2 to 3 garlic cloves, minced
1 tablespoon red pepper flakes
1/2 teaspoon garlic salt
Salt and black pepper, to taste
1 1/2 cups freshly grated pepper jack cheese
1 cup freshly grated Parmesan cheese
Instructions
1. Cook the penne in salted water according to the package directions. Drain well and set aside.
2. In a large skillet over medium-low heat, combine the butter and heavy cream. Stir until the butter melts completely.
3. Let the cream mixture gently simmer for about 2 minutes, stirring often.
4. Slowly whisk in the pepperoncini juice, if using. Add the minced garlic, red pepper flakes, garlic salt, salt, and black pepper. Simmer for 1 more minute.
5. Turn off the heat. Add the pepper jack and Parmesan a handful at a time, stirring after each addition until smooth and melted.
6. Add the drained pasta to the sauce and toss until evenly coated. Serve warm.
Notes
Freshly grated cheese melts more smoothly and creates the best sauce texture.
Use less red pepper flakes for a milder pasta dish.
Reheat leftovers gently with a splash of cream or milk.
