Creamy mushroom wild rice is a comforting one-pan recipe made with mushrooms, Parmesan cheese, and tender wild rice in a rich savory sauce.
Ingredients
2 tablespoons olive oil
1 small onion, diced
2 garlic cloves, minced
8 ounces mushrooms, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
2 cups vegetable broth or chicken broth
1 cup wild rice blend
1/4 cup heavy cream
1/2 cup shredded Parmesan cheese
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced onion and sliced mushrooms. Cook, stirring occasionally, until the vegetables are tender and lightly browned, about 6–8 minutes.
3. Stir in the minced garlic and cook for 1 minute until fragrant.
4. Season the mixture with salt, black pepper, and Italian seasoning.
5. Pour in the broth and stir in the wild rice blend. Bring everything to a boil.
6. Reduce the heat to low, cover the skillet, and simmer for about 15 minutes, or according to the rice package directions, until the rice is tender.
7. Remove the skillet from the heat and let it rest, covered, for 5 minutes.
8. Stir in the heavy cream and Parmesan cheese until the rice becomes creamy and well combined. Serve warm.
Notes
Use freshly grated Parmesan for the smoothest texture.
Cremini mushrooms provide the richest flavor.
Add a splash of broth when reheating leftovers to keep the rice creamy.
