Description
Creamy pasta with golden mushrooms, garlic, parmesan, and a silky sauce ready in 20 minutes.
Ingredients
6 oz fettuccine or linguine
2 tablespoons unsalted butter
1/2 tablespoon olive oil
10 oz mushrooms, sliced thin
2 garlic cloves, finely chopped
3/4 cup chicken or vegetable broth
3/4 cup heavy cream
1/3 cup finely grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
Extra parmesan, for serving
Chopped parsley (optional)
Instructions
1. Bring salted water to a boil and cook pasta until just shy of al dente. Reserve 1 cup pasta water, then drain.
2. In a large skillet over high heat, melt butter with olive oil.
3. Add mushrooms and cook until moisture releases and mushrooms turn golden brown, about 4–5 minutes.
4. Stir in garlic and cook 1 minute until fragrant.
5. Pour in broth and scrape the pan. Simmer until slightly reduced.
6. Add heavy cream, parmesan, salt, and pepper. Simmer 2 minutes until slightly thickened.
7. Add cooked pasta and toss to coat. Cook 1–2 minutes until sauce clings to pasta.
8. Loosen with reserved pasta water if needed. Serve with extra parmesan and parsley.
Notes
Use vegetable broth for a vegetarian version.
Freshly grated parmesan melts best.
Serve immediately for best texture.
