Description
A rich and vibrant chicken dish simmered in a creamy lemon herb sauce, ready in just 30 minutes.
Ingredients
1/2 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
6 (4-oz.) boneless, skinless chicken thighs
3 garlic cloves, grated
3/4 cup heavy cream
1/2 cup finely grated parmesan
1 lemon, zested and juiced
2 tablespoons chopped parsley
2 tablespoons chopped dill
2 tablespoons sliced chives
2 tablespoons thinly sliced basil
Lemon wedges, for serving
Instructions
1. In a shallow bowl, combine the flour, salt, and pepper. Heat the olive oil in a large skillet over medium-high heat.
2. Dredge each chicken thigh in the flour mixture, shaking off excess. Add the chicken to the hot skillet and cook until golden and fully cooked, about 4 to 6 minutes per side. Transfer the chicken to a plate.
3. Lower the heat to medium and add the garlic to the skillet. Cook briefly until fragrant. Stir in the heavy cream, parmesan, lemon zest, and lemon juice. Simmer for 2 to 3 minutes, or until slightly thickened.
4. Taste and adjust seasoning as needed. Stir in three-fourths of the herbs, then return the chicken to the skillet, coating it in the sauce.
5. Sprinkle the remaining herbs over the top and serve warm with lemon wedges.
Notes
Serve with pasta, rice, or roasted vegetables. Adjust lemon to taste for extra brightness.
