Description
Rich and creamy garlic parmesan potatoes cooked in a skillet until perfectly tender and coated in a velvety sauce.
Ingredients
2 tablespoons olive oil
1 1/2 pounds baby potatoes, halved
1/3 cup water
3/4 teaspoon kosher salt, plus more to taste
1 1/2 cups heavy cream
3/4 cup freshly grated Parmesan cheese
4 garlic cloves, minced
1/4 teaspoon black pepper
Chopped fresh parsley, optional garnish
Instructions
1. Heat olive oil in a large nonstick skillet over medium-high heat and place potatoes cut-side down
2. Add water and salt, cover and cook for 9–10 minutes until water evaporates and potatoes brown
3. Flip potatoes, reduce heat, cover and cook 3–4 minutes until tender
4. Transfer potatoes to a plate
5. Add cream, Parmesan, garlic, and pepper to skillet and simmer 2 minutes
6. Taste and adjust salt if needed
7. Return potatoes and simmer briefly in sauce
8. Garnish with parsley and serve warm
Notes
Use freshly grated Parmesan for best texture
Do not rush browning step
Serve immediately for best flavor
