Description

A rich and comforting creamy garlic mushroom rice made with simple ingredients and deep savory flavor.


Ingredients

1 lb mushrooms, sliced

1 small onion, finely chopped

3 garlic cloves, crushed

2 cups long-grain rice

4 cups vegetable broth

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons sour cream

1 tablespoon butter

Green onions, sliced (for serving)


Instructions

1. Heat a large, deep skillet over medium heat and melt the butter. Add the mushrooms and cook until browned and tender. Remove them from the pan and set aside.

2. In the same pan, add the chopped onion and cook until soft and translucent. Stir in the garlic and cook for about 30 seconds until fragrant.

3. Add the rice and pour in the vegetable broth. Season with salt and black pepper.

4. Bring to a gentle simmer, then cook uncovered or with the lid slightly ajar until the rice is fully cooked and has absorbed most of the liquid.

5. Stir the cooked mushrooms and sour cream into the rice. Remove from heat, cover, and let it sit for 5 minutes to steam and become creamy.

6. Fluff the rice with a fork and garnish with sliced green onions before serving.

Notes

Use fresh mushrooms for best flavor.

Do not over-stir the rice while cooking.
