Description
A smooth and flavorful low-carb side dish made with cauliflower, garlic, and cheese.
Ingredients
1 large head cauliflower, cut into florets
2 tablespoons unsalted butter
3 cloves garlic, minced
3 tablespoons cream cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
Optional: chopped parsley or chives for serving
Instructions
1. Rinse the cauliflower and cut it into small florets.
2. Steam or boil the cauliflower for about 10 minutes, until very tender. Drain well so the mash does not turn watery.
3. While the cauliflower cooks, melt the butter in a small skillet over medium heat. Add the garlic and cook for 1 to 2 minutes, stirring often, until fragrant and lightly golden.
4. Add the drained cauliflower, garlic butter, cream cheese, Parmesan cheese, salt, and pepper to a food processor.
5. Blend until smooth and fluffy. You can also mash everything by hand for a thicker texture.
6. Taste and adjust the seasoning as needed.
7. Serve warm, topped with herbs if desired.
Notes
Drain cauliflower thoroughly to avoid watery texture.
Adjust seasoning to taste.
Blend longer for smoother consistency or mash by hand for texture.
