Description
A silky, rich pasta dinner made with garlic, butter, cream, and parsley in just 12 minutes.
Ingredients
12 ounces pasta
20 garlic confit cloves, or 6 fresh garlic cloves, minced
3 tablespoons olive oil or garlic-infused oil
1 small shallot, finely diced
6 tablespoons butter
1/3 cup heavy cream
2 tablespoons chopped fresh parsley
1/2 cup reserved pasta water, as needed
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the pasta until it is about 2 minutes shy of al dente according to package directions. Reserve 1/2 cup pasta water before draining.
2. Set a large skillet over medium heat and add olive oil. Add shallot and cook for 2 minutes until softened.
3. Stir in garlic and cook for 1 minute. If using garlic confit, mash gently with the back of a spoon.
4. Reduce heat to low. Add half the butter and stir until melted.
5. Add remaining butter and continue stirring until smooth and glossy.
6. Pour in cream and let sauce gently bubble for 1 to 2 minutes.
7. Season with salt and black pepper, then stir in parsley.
8. Add drained pasta and toss, adding reserved pasta water as needed until silky.
9. Serve immediately while warm and creamy.
Notes
Use garlic confit for a sweeter mellow flavor.
Reserve pasta water for the glossiest sauce.
