Description

A rich and comforting skillet chicken dish with garlic, butter, cream, and Parmesan.


Ingredients

4 thin-sliced boneless, skinless chicken breasts

4 tablespoons all-purpose flour

4 tablespoons shredded Parmesan cheese

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

2 tablespoons butter

1 small yellow onion, finely chopped

1 whole head garlic, cloves peeled

1 1/4 cups chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt, to taste

Black pepper, to taste

2 tablespoons chopped fresh parsley

Extra Parmesan cheese, for serving (optional)


Instructions

1. In a shallow bowl, stir together the flour, shredded Parmesan, garlic powder, salt, and black pepper.

2. Coat each piece of chicken in the flour mixture, pressing lightly so it sticks. Shake off any extra.

3. Heat a large skillet over medium-high heat. Add the olive oil and butter.

4. Once the butter has melted, place the chicken in the skillet. Cook for 3 to 5 minutes per side, or until golden brown and cooked through. Transfer to a plate.

5. In the same skillet, add the chopped onion and cook for 5 to 7 minutes until softened.

6. Add the garlic cloves and cook for 2 to 3 minutes until fragrant.

7. Pour in a splash of chicken broth and scrape up browned bits.

8. Add remaining broth and heavy cream. Bring to a gentle simmer.

9. Stir in Parmesan and cook until sauce thickens.

10. Return chicken to skillet and spoon sauce over. Cook 2 more minutes.

11. Garnish with parsley and extra Parmesan. Serve warm.

Notes

Use thin chicken for even cooking.

Adjust salt based on Parmesan.

Add broth when reheating to loosen sauce.
