Description
Tender new potatoes covered in a silky dill cream sauce with buttery onions and warm seasoning. This comforting side dish is rich, fresh, and perfect for family dinners or holiday meals.
Ingredients
3 pounds new potatoes
4 cups heavy cream
1 cup onion, finely chopped
1/4 cup butter
1/4 to 1/2 cup fresh dill, chopped
1/2 to 1 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon ground nutmeg
Instructions
1. Melt the butter in a large heavy-bottomed saucepan over medium heat.
2. Add the chopped onion and cook until soft and translucent, stirring occasionally. Avoid browning the onions.
3. Slowly whisk in the heavy cream until smooth.
4. Stir in the chopped dill and nutmeg. Season with salt and black pepper.
5. Reduce the heat to low and let the sauce simmer gently for about 30 minutes, stirring occasionally, until slightly thickened.
6. While the sauce cooks, wash the potatoes thoroughly and remove any blemishes.
7. Place the potatoes in a large pot and cover with cold water. Add a teaspoon of salt to the water.
8. Bring to a boil over medium-high heat and cook until the potatoes are tender when pierced with a fork, about 15 to 20 minutes.
9. Drain the potatoes well and transfer to a serving dish.
10. Spoon the warm creamy dill sauce over the potatoes and serve immediately.
Notes
Use fresh dill for the brightest flavor.
Do not boil the cream sauce aggressively or it may separate.
Serve immediately for the creamiest texture.
