A comforting dish of tender chicken served over rice with a rich, homemade gravy.
Ingredients
4 cups water
2 cups long-grain white rice
1 cup all-purpose flour
3/4 teaspoon salt, divided
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon dried thyme, crushed
4 boneless, skinless chicken breasts
3 tablespoons butter
3/4 cup cold water, plus more as needed
Instructions
1. Add water and rice to a saucepan and bring to a boil.
2. Reduce heat, cover, and simmer for 20 minutes until tender.
3. Mix flour, salt, pepper, paprika, and thyme in a bowl.
4. Coat chicken in flour mixture and reserve 2 tablespoons.
5. Melt butter in a skillet and cook chicken until golden and done.
6. Remove chicken and keep drippings in skillet.
7. Whisk water with reserved flour mixture and salt.
8. Pour into skillet and cook until thickened.
9. Add water if needed for consistency.
10. Serve chicken over rice and spoon gravy on top.
Notes
Ensure chicken reaches 165°F for safety.
Adjust gravy thickness with small amounts of water.
Serve immediately for best texture.
