Ingredients
2 tablespoons olive oil
1 yellow onion, diced
6 carrots, chopped
4 celery stalks, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
3/4 pound boneless, skinless chicken breasts or chicken thighs
3 garlic cloves, minced
1 tablespoon Italian seasoning
1 teaspoon smoked paprika
2 tablespoons fresh thyme leaves
Pinch of red pepper flakes
Salt and black pepper, to taste
5 cups low-sodium vegetable broth
1/2 cup chopped sun-dried tomatoes
4 cups baby spinach
1 1/2 cups heavy cream or whole milk
1/2 cup grated Parmesan cheese
1 pound potato gnocchi
Instructions
1. Heat the olive oil in a large soup pot over medium heat. Add the onion and cook for about 5 minutes until softened and fragrant.
2. Stir in the carrots and celery. Cook for another 3 minutes, stirring occasionally.
3. Add the butter and flour, stirring constantly for 1 minute to create a light roux.
4. Place the chicken into the pot and season with garlic, Italian seasoning, smoked paprika, thyme, red pepper flakes, salt, and black pepper. Stir well to coat everything evenly.
5. Pour in the vegetable broth and bring the soup to a gentle simmer. Cook for about 20 minutes, or until the chicken is fully cooked.
6. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the soup.
7. Stir in the sun-dried tomatoes, spinach, cream, Parmesan cheese, and gnocchi.
8. Simmer for about 5 minutes, until the gnocchi is tender and the soup is creamy and heated through. Add extra broth if the soup becomes too thick.
9. Taste and adjust seasoning if needed. Serve warm with extra Parmesan cheese on top.
Notes
Use heavy cream for a richer texture or whole milk for a lighter soup.
Add extra broth while reheating if the soup thickens too much.
Fresh Parmesan cheese melts more smoothly into the broth.
