Description
Creamy Cajun shrimp rice is a quick and comforting skillet dinner made with buttery rice, bold Cajun seasoning, garlic, and tender shrimp.
Ingredients
1 1/3 cups uncooked long-grain white rice
2 2/3 cups chicken broth
1 pound large shrimp, peeled and deveined
4 tablespoons butter, melted and divided
1 teaspoon minced garlic
1 1/2 teaspoons paprika
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
Optional: chopped parsley for garnish
Instructions
1. In a small bowl, mix the paprika, salt, garlic powder, black pepper, onion powder, oregano, cayenne pepper, and red pepper flakes.
2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic, half of the Cajun seasoning, and the rice. Stir for about 1 minute to lightly coat the rice.
3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the skillet, and simmer for 15 minutes, stirring once or twice as it cooks.
4. While the rice cooks, toss the shrimp with the remaining 2 tablespoons of melted butter and the rest of the Cajun seasoning.
5. Add the seasoned shrimp to the skillet and gently stir it into the rice. Cover again and cook for 3 to 5 minutes, or until the shrimp is pink, opaque, and cooked through.
6. Sprinkle with chopped parsley if desired, then serve warm.
Notes
Use large shrimp for the best texture.
Adjust cayenne pepper for a milder or spicier dish.
Add bell peppers or spinach for extra vegetables.
