Description
A rich and comforting potato soup loaded with smoked sausage, cheddar cheese, and bold Cajun flavor.
Ingredients
2 tablespoons olive oil
13 ounces smoked turkey or chicken sausage, sliced
1 small yellow onion, chopped
1 red bell pepper, chopped
2 celery ribs, chopped
3 garlic cloves, minced
3 teaspoons Cajun seasoning, divided
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1/2 cup half-and-half
4 large russet potatoes, peeled and diced
1 cup shredded sharp cheddar cheese
Salt and black pepper, to taste
Chopped fresh parsley, for garnish
Instructions
1. Warm the olive oil in a large Dutch oven or soup pot over medium heat. Add the sliced sausage and cook until lightly browned. Transfer it to a plate and set aside.
2. Add the onion, bell pepper, and celery to the same pot. Cook for 2 to 3 minutes, stirring occasionally, until the vegetables begin to soften.
3. Stir in the garlic and cook for about 1 minute, just until fragrant.
4. Add the butter and let it melt. Sprinkle in the flour and stir until the vegetables are coated and a thick paste forms. Cook for 2 to 3 minutes.
5. Slowly pour in the chicken broth while stirring, then add the half-and-half. Stir in the potatoes and Cajun seasoning.
6. Reduce the heat to medium-low and simmer for 20 to 25 minutes, stirring now and then, until the potatoes are tender.
7. Return the sausage to the pot and stir in the cheddar cheese until melted and creamy.
8. Taste and season with salt and black pepper as needed. Serve warm with fresh parsley on top.
Notes
For a spicier soup, add extra Cajun seasoning or a pinch of cayenne pepper.
Use freshly shredded cheddar cheese for the smoothest texture.
Add extra broth while reheating if the soup thickens too much.
