A rich and comforting butter chicken with a creamy tomato sauce, perfect for easy dinners.
Ingredients
2 tablespoons vegetable oil
1 1/2 to 2 pounds boneless chicken breasts, cut into bite-size pieces
6 tablespoons butter
1 small onion, finely chopped
2 tablespoons minced garlic
2 tablespoons freshly grated ginger
1 tablespoon garam masala
1 teaspoon turmeric
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon salt
1 can diced tomatoes, 15 ounces, undrained
1 can tomato paste, 6 ounces
1 cup chicken broth
1 cup heavy cream
1/4 cup chopped cilantro, optional
Instructions
1. Warm the oil in a large skillet over medium-high heat. Add the chicken pieces and cook, stirring often, until cooked through, about 5 to 7 minutes. Transfer the chicken to a plate.
2. Add the butter to the same skillet. Once melted, stir in the onion, garlic, and ginger. Cook for 3 to 5 minutes, until the onion softens.
3. Sprinkle in the garam masala, turmeric, smoked paprika, chili powder, and salt. Stir well and cook for about 1 minute to deepen the flavor.
4. Add the diced tomatoes, tomato paste, and chicken broth. Return the chicken to the skillet and stir to coat it in the sauce.
5. Bring the mixture to a gentle boil, then reduce the heat and simmer uncovered for 10 to 15 minutes, until the sauce thickens.
6. Turn off the heat and stir in the heavy cream and cilantro, if using. Serve warm over rice, if desired.

Adjust spice levels to taste.
