A rich and comforting creamy baked rice casserole with chicken, pasta, and melted cheese.
Ingredients
2 cups cooked, shredded chicken breast
2 cups cooked pasta (such as penne or rotini)
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup ricotta cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Fresh basil leaves for garnish
Instructions
1. Preheat your oven to 375°F and lightly grease a baking dish with olive oil.
2. In a large bowl, combine the cooked pasta, shredded chicken, marinara sauce, garlic powder, Italian seasoning, salt, and pepper. Mix until evenly coated.
3. Spread half of the mixture into the prepared baking dish.
4. Add spoonfuls of ricotta cheese over the layer, then sprinkle with half of the mozzarella and Parmesan cheese.
5. Add the remaining pasta and chicken mixture on top, spreading it evenly.
6. Finish by topping with the remaining mozzarella and Parmesan cheese.
7. Bake uncovered for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
8. Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh basil leaves.
