Description

Creamy baked chicken breasts made with garlic, spinach, and sun-dried tomatoes in a rich sauce.


Ingredients

4 boneless, skinless chicken breasts

Salt and black pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup low-sodium chicken broth

1/2 cup chopped sun-dried tomatoes

2 teaspoons Italian seasoning

1 teaspoon paprika

1/2 teaspoon red pepper flakes

1 cup chopped fresh spinach

Chopped fresh parsley, for garnish


Instructions

1. Preheat the oven to 400°F.

2. In a 9×13-inch baking dish, stir together olive oil, garlic, heavy cream, chicken broth, sun-dried tomatoes, Italian seasoning, paprika, and red pepper flakes.

3. Season chicken with salt and pepper, then place into the sauce.

4. Bake uncovered for 20 to 25 minutes.

5. Add spinach and bake another 5 to 10 minutes until wilted and chicken reaches 165°F.

6. Broil for 2 to 3 minutes if desired.

7. Let rest, then garnish with parsley and serve.

Notes
