Description

A rich and silky creamy Alfredo pasta made with butter, cream, and Parmesan cheese for a quick comforting meal.


Ingredients

8 oz dried fettuccine

3 tablespoons unsalted butter

1 small shallot, finely minced

1/2 cup heavy cream

3/4 cup freshly grated Parmesan cheese

1/4 teaspoon salt

Freshly ground black pepper, to taste

Fresh parsley, chopped

Extra grated Parmesan cheese


Instructions

1. Bring a large pot of salted water to a boil and cook fettuccine until al dente.

2. Melt butter in a skillet over medium-high heat.

3. Add shallot and cook until soft.

4. Pour in cream and bring to a gentle boil, then simmer.

5. Remove from heat and stir in Parmesan, salt, and pepper.

6. Reserve pasta water and drain pasta.

7. Add pasta and reserved water to sauce and toss over heat.

8. Serve immediately with garnish.

Notes

Use freshly grated Parmesan for best texture.

Reserve extra pasta water if needed.
