Ingredients
1/4 cup unsalted butter
1/2 white onion, finely diced
1 clove garlic, minced
1/4 cup all-purpose flour
3 cups chicken broth
2 cups half-and-half
8 ounces cream cheese, softened
1 1/4 cups shredded Swiss cheese
2 cups cooked chicken, diced or shredded
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
Instructions
1. In a large pot, melt the butter over low heat. Add the diced onion and cook until soft and translucent, about 2–3 minutes.
2. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
3. Sprinkle the flour over the onions and stir constantly for 1 minute to cook out the raw flour taste.
4. Slowly whisk in the chicken broth, followed by the half-and-half, stirring continuously to keep the soup smooth.
5. Add the softened cream cheese and stir until fully melted and blended into the broth.
6. Gradually stir in the shredded Swiss cheese, mixing until the soup is creamy and the cheese is fully melted.
7. Add the cooked chicken and stir until heated through. Season with salt and black pepper to taste.
8. Serve hot and enjoy.
Notes
For extra flavor, add a pinch of ground mustard or a few chopped chives on top before serving. Store leftovers in the fridge for up to 3 days and reheat gently over low heat.
