Description

These Chicken Caesar Salad Cups combine crisp wonton shells with creamy homemade Caesar dressing, fresh Romaine, and tender chicken for the ultimate party appetizer.


Ingredients

Homemade Caesar Dressing

1 cup mayonnaise

1 ½ teaspoons Dijon mustard

1 ½ teaspoons Worcestershire sauce

1 teaspoon anchovy paste

2 cloves garlic, minced

2 tablespoons grated Parmesan cheese

2 tablespoons fresh lemon juice

Wonton Cups

12 wonton wrappers

1 tablespoon olive oil

Salad Filling

2 ½ cups chopped Romaine lettuce

1 cup cooked chicken, diced small

45 tablespoons Caesar dressing

1 cup mini croutons

2 tablespoons grated Parmesan cheese

1 tablespoon minced parsley (optional)


Instructions

1. Combine the mayonnaise, Dijon mustard, Worcestershire sauce, anchovy paste, garlic, Parmesan, and lemon juice in a blender. Blend briefly until smooth. Refrigerate until needed.

2. Heat the oven to 350°F. Lightly brush a standard muffin tin with olive oil. Press a wonton wrapper into each cup, then brush the wrappers with more oil. Bake for 8–10 minutes, or until crisp and lightly golden. Cool completely.

3. In a medium bowl, mix the chopped Romaine and chicken with enough dressing to lightly coat. Spoon the mixture into the cooled wonton cups. Top with croutons, Parmesan, and parsley if desired. Serve immediately.

Notes

For best texture, assemble just before serving. Wonton cups may be baked up to two days ahead and stored in an airtight container.
