Chicken Bacon Ranch Potato Bake (Easy Oven Dinner)

Description

A hearty baked dinner with roasted potatoes, seasoned chicken, turkey bacon, and melted cheddar finished with ranch flavor.


Ingredients

3 pounds russet potatoes, cut into 1-inch chunks

1/3 cup olive oil or avocado oil

2 tablespoons hot sauce

1 tablespoon garlic powder

1 ounce ranch seasoning mix, divided

1 teaspoon salt

1/2 teaspoon black pepper

2 pounds boneless, skinless chicken breast, cut into 1-inch pieces

1 cup turkey bacon bits

1 cup shredded cheddar cheese

Sliced green onions, optional


Instructions

1. Preheat the oven to 425°F and lightly grease a 9 x 13-inch baking dish.

2. Place potatoes in a large bowl and toss with oil, hot sauce, garlic powder, half the ranch seasoning, salt, and pepper.

3. Transfer potatoes to the baking dish with a slotted spoon and roast for 45 minutes, stirring every 15 minutes.

4. Add chicken to the same bowl, toss with remaining ranch seasoning.

5. Remove potatoes, stir, then top with two-thirds of the bacon and half the cheese.

6. Arrange chicken over potatoes and finish with remaining bacon and cheese.

7. Bake 15 to 20 minutes until chicken is cooked and cheese is bubbly.

8. Rest briefly and garnish with green onions before serving.

Notes

Cut potatoes evenly for consistent roasting. Let the bake rest a few minutes before serving to help layers set.
