1 pound uncooked potato gnocchi

2 cups cooked chicken, shredded or chopped

2 cups fresh baby spinach, packed

Salt, to taste

Instructions

1. Heat the olive oil in a large soup pot over medium heat. Add the chopped onion and cook for about 4–5 minutes, stirring occasionally, until softened and lightly golden.
