A cozy one-pot chicken and rice dish packed with warm spices and comforting flavors.
Ingredients
2 teaspoons paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/4 pounds boneless, skinless chicken thighs
2 tablespoons cooking oil, divided
1 yellow onion, diced
1 cup long-grain white rice, uncooked
1 3/4 cups vegetable broth
1 tablespoon chopped parsley, optional
Instructions
1. Mix spices and rub over chicken
2. Brown chicken in oil and set aside
3. Cook onion until softened
4. Toast rice briefly
5. Add broth and scrape pan
6. Return chicken to skillet
7. Simmer covered for 20 minutes
8. Rest covered for 5 minutes
9. Fluff rice and serve
Notes
Do not lift the lid while simmering to ensure proper rice texture.
Add vegetables for variation if desired.
