Description

A hearty breakfast casserole loaded with sausage, eggs, hash browns, spinach, and melted cheddar cheese. Perfect for brunch, holidays, or meal prep mornings.


Ingredients

Cooking spray

1 tablespoon olive oil

1 pound turkey or chicken breakfast sausage

1 medium yellow onion, diced

1 medium red bell pepper, diced

1 1/2 teaspoons kosher salt, divided

3 packed cups baby spinach

12 large eggs

2 cups half-and-half

1 tablespoon Dijon mustard

1/2 teaspoon black pepper

1 (20-ounce) bag frozen shredded hash browns, not thawed

1 1/2 cups shredded sharp cheddar cheese, divided


Instructions

1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray.

2. Warm the olive oil in a large skillet over medium heat. Add the turkey or chicken sausage and cook, breaking it into small pieces, until fully cooked, about 6 to 8 minutes.

3. Add the onion, bell pepper, and 1/2 teaspoon salt. Cook for 3 to 5 minutes, until softened. Stir in the spinach and cook until wilted, about 1 minute. Transfer the mixture to the prepared baking dish.

4. In a large bowl, whisk together the eggs, half-and-half, Dijon mustard, remaining 1 teaspoon salt, and black pepper.

5. Add the frozen hash browns and 3/4 cup cheddar cheese to the baking dish. Stir everything together and spread into an even layer.

6. Pour the egg mixture evenly over the casserole. Sprinkle the remaining 3/4 cup cheddar on top.

7. Bake for 55 to 60 minutes, or until the center is set and a knife inserted in the middle comes out clean. Let rest for 5 minutes before serving.

Notes

For extra crisp edges, allow the casserole to rest for several minutes before slicing.

Frozen hash browns should not be thawed before baking.

Leftovers store well in the refrigerator for up to 4 days.
