A creamy, comforting baked rice casserole loaded with cheddar cheese and simple ingredients, perfect for family meals.
Ingredients
1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long-grain rice
2 cups shredded cheddar cheese
1 cup minced fresh parsley
1 cup whole milk
4 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon salt
Instructions
1. Preheat the oven to 350°F. Grease a shallow 1-quart baking dish.
2. In a large saucepan, melt the butter over medium heat. Add the onion and garlic, then cook until softened and fragrant.
3. Stir in the cooked rice, cheddar cheese, parsley, milk, beaten eggs, Worcestershire sauce, and salt. Mix until everything is evenly combined.
4. Spoon the mixture into the prepared baking dish and spread it out evenly.
5. Bake uncovered for 40 to 45 minutes, or until the center is set and a knife inserted in the middle comes out clean.
6. Let the casserole rest for a few minutes before serving.
Notes
For extra flavor, try adding steamed broccoli or cooked chicken.
