A rich and creamy baked potato dish loaded with melted cheese and comforting flavors, perfect for family meals.
Ingredients
2 1/2 pounds potatoes, peeled and cut into small cubes
2/3 cup milk
3/4 cup heavy cream
1/3 cup mayonnaise, or 1/4 cup extra heavy cream
1 1/2 teaspoons fresh thyme leaves, plus more for garnish
2 large garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar, Monterey Jack, or Colby cheese
1 cup shredded mozzarella cheese
Instructions
1. Preheat the oven to 350°F.
2. Place the cubed potatoes in a large mixing bowl. Add the milk, heavy cream, mayonnaise, thyme, garlic, salt, pepper, and 2 cups of shredded cheese. Stir until the potatoes are evenly coated.
3. Transfer the mixture to a 3-quart baking dish and spread it out evenly. Cover tightly with foil.
4. Bake for 60 minutes, or until the potatoes are tender when pierced with a fork.
5. Remove the foil and sprinkle mozzarella over the top. Bake uncovered for another 25 minutes, or until the cheese is melted, golden, and bubbly.
6. Let the potato bake rest for 5 to 10 minutes before serving. Garnish with extra thyme if desired.

For best results, cut potatoes evenly for consistent cooking. Let the bake rest before serving to enhance texture.
