Description

Rich, creamy, and loaded with melted cheese, this comforting potato casserole is perfect for family dinners and holidays.


Ingredients

2 1/2 pounds potatoes, peeled and cut into small cubes

2/3 cup milk

3/4 cup heavy cream

1/3 cup mayonnaise

1 1/2 teaspoons fresh thyme leaves, plus more for garnish

2 large garlic cloves, minced

3/4 teaspoon salt

1/2 teaspoon black pepper

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese


Instructions

1. Preheat the oven to 350°F.

2. Place the cubed potatoes in a large mixing bowl. Add the milk, heavy cream, mayonnaise, thyme, garlic, salt, pepper, and cheddar cheese. Stir until the potatoes are evenly coated.

3. Transfer the mixture to a 3-quart baking dish and spread it out evenly. Cover the dish tightly with foil.

4. Bake for 60 minutes, or until the potatoes are tender when pierced with a fork.

5. Remove the foil and sprinkle the mozzarella cheese over the top. Bake uncovered for another 25 minutes, or until the cheese is melted and golden.

6. Let the potato bake rest for 5 to 10 minutes before serving. Garnish with extra thyme if desired.
